Recipe: Lemon Sugar Cookies
So I found this great recipe on Pinterest, & it's from Martha Stewart's website. As usual I changed the recipe a tiny bit!
Ingredients:
3 cups all purpose flour*
1 tsp. baking soda
1 3/4 cups white sugar
1/4 cup brown sugar, packed
1 tbsp. finely grated lemon zest**
1 cup butter (2 sticks), at room temperature
2 eggs, at room temperature
1 tbsp. lemon juice

**I used a lemon zester on a lemon & then finely chopped the zest.
Instructions:
-Preheat oven to 350 degrees.
-Grease cookie sheets.
-Sift flour & baking soda into a bowl, set aside.
-Combine sugars & lemon zest in a bowl with an electric mixer, mix on medium speed for about 30 seconds.
-Add butter, mix until pale & fluffy, about 1 minute.
-Mix in eggs 1 at a time.
-Add lemon juice, & reduce speed to slow.
-Gradually add flour/baking soda mixture.
-Scoop dough onto greased cookie with spoon or cookie scooper.
-Bake until golden brown, about 10 minutes.
-Transfer from cookie sheet onto wire cooling rack.
-Cool & enjoy!
Makes about 60 cookies.
These are so delicious! I love lemon cookies & this is the best recipe I've tried to make them, & trust me I've tried a lot. They have just the right amount of lemon flavoring, not too faint a lemon flavor or too overpowering. Everyone in my family has been enjoying them, & they're kind of addictive. My cookies were made with gluten free flour as mentioned above so they are a bit flat, but that did not effect the taste at all. These cookies are crunchy, buttery, lemony, sugar cookie goodness, that I highly recommend making!
